Almond Matcha Muffins

Almond Matcha Muffins (Makes 6 muffins)

Enjoy these tasty Almond Matcha Muffins for breakfast or mid-day snack, with your matcha tea of course! Healthy, filling, and not too sweet. With its green tea benefits, healthy carbohydrates, and good fats, plus a little protein, Almond Matcha Muffins are also ideal for a post-workout replenishment snack.

Ingredients

70 gr all-purpose flour
50 gr almond flour
1 tsp baking powder
2 tsp matcha (Tea Lover’s Ceremonial Matcha or Foodies Matcha Tea)
40 grams coconut sugar
2 eggs (or egg replacer for Vegan style)
100 ml milk or alternative
2 tbsp coconut oil
1 tsp vanilla extract
Optional: sliced almonds

Directions

1. Preheat oven to 350 degrees Fahrenheit
2. In a small bowl whisk together the dry ingredients: flour, almond flour, coconut sugar, baking powder and matcha powder
3. Add eggs, milk, coconut oil, and vanilla extract
4. With an electric mixer, mix until is creamy and smooth
5. Use paper muffin cups or spray the muffin tin with oil
6. Divide the batter among the muffin cups, up to about 2/3 full. If desired, top each muffin with sliced almonds
7. Bake about 25 minutes until golden and the tops spring back when lightly pressed
8. Cool in the muffin tin for 5 minutes, then remove to cool on a wire rack
9. Enjoy!
