Lets Make Vegan Matcha Protein Muffins
4 large ripe bananas1 cup chunky peanut butter2 tbsp egg replacer (package directions)8 tbsp protein powder *2 tsp baking powder1 tsp salt2 tbsp Foodie’s Culinary Matcha **1/2 cup water1/4 cup mini dark chocolate chips
* We used Vega vanilla smoothie protein powder which includes vanilla and a sweetener. Otherwise, you can use your own fave sweetener and vanilla extract.

1. Preheat to 400 F2. Place all ingredients in a blender – except the chocolate chips – and blend until smooth3. Use a spatula to fold chocolate chips into the mix4. Oil or spray a standard muffin tin5. Bake 20-25 minutes or until muffins are nicely set
Makes 18 medium-sized muffins.
