Lets Make Vegan Matcha Protein Muffins
Ingredients
4 large ripe bananas
1 cup chunky peanut butter
2 tbsp egg replacer (package directions)
8 tbsp protein powder
*2 tsp baking powder1 tsp salt
2 tbsp Foodie’s Culinary Matcha
**1/2 cup water
1/4 cup mini dark chocolate chips
* We used Vega vanilla smoothie protein powder which includes vanilla and a sweetener. Otherwise, you can use your own fave sweetener and vanilla extract.

Directions
1. Preheat to 400 F
2. Place all ingredients in a blender – except the chocolate chips – and blend until smooth
3. Use a spatula to fold chocolate chips into the mix
4. Oil or spray a standard muffin tin
5. Bake 20-25 minutes or until muffins are nicely set
