Lets Make Pecan Pear Goat Cheese Salad
Ingredients
2 heads of lettuce (romaine or butter)1 pear, sliced1 cup strawberries, sliced2 avocados, diced1 cup goat cheese or feta, diced1 cup pecans¼ cup sugar
Dressing
1 ½ tsp. Foodie’s Matcha Tea⅓ cup olive oil¼ cup red wine vinegar1 tsp. sugar1 tablespoon mustard2 cloves garlic, minced¼ tsp. salt¼ tsp. pepper
Directions
1. Place sugar and pecans in a pan and stir over medium heat until the pecans are caramelized2. Take off heat and allow to cool, then break into pieces3. Wash and chop lettuce then add in pear, strawberries, avocado and cheese4. In a sealed jar or plastic container, combine all salad dressing ingredients, and shake until thoroughly mixed5. Drizzle dressing over the salad. Garnish with the caramelized pecans, toss and serve.
