Let’s Make Watermelon Poke Bowl With Matcha Dressing
3 cups watermelon cubed1/4th cup soy sauce1 tablespoon rice wine vinegar1/2 tablespoon ginger (grated)1 tablespoon maple syrup1 tablespoon olive oil
For the Dressing
1/4th cup Coconut Milk2 teaspoon matcha powderJuice of 1 lime1 tablespoon olive oil1 tablespoon rice wine vinegar2 teaspoons hot water
For the Bowl
Rice, Avocado, Green Onions, Sesame
1. Preheat your oven to 3502. Cube your watermelon and mix it with soy sauce, rice wine vinegar, ginger, maple syrup and olive oil3. Roast for 15-20 minutes4. Let cool5. In the meantime, make your dressing by adding matcha powder and hot water, and mix well until all combined. Then add your coconut milk, lime juice, olive oil and vinegar.
Assemble your bowl by placing in your rice and poke and topping with avocado, green onions and sesame seeds.
