Matcha Protein Bliss Balls

Matcha Protein Bliss Balls or ‘Protein Bites’ as some call them, make for the perfect energizing snack. They’re packed with plant-based proteins, healthy fats, and they’re rich in fiber, all to help power you through your day. They’re also gluten-free and vegan with no added sugars! Also known as matcha pistachio protein balls, these tasty bites are easy to prepare and serve as a healthy snack option for on-the-go lifestyles.

Ingredients

1.5 cups dates, pitted
7 oz (200 g) white beans, cooked & drained)
2 oz  (60g) cashew butter
3 oz (90g) plant-protein powder
3 tbsp cocoa powder
½ tsp salt

Coating

Matcha powder, Crushed pistachios

Directions

1. Soak the pitted dates in a small bowl in hot water for 15 minutes if needed, then drain well.
2. Add the dates along with the cooked and drained white beans to your food processor. Blend for 1-2 minutes.
3. Add the rest of the ingredients for the bliss balls and blend again until a well-combined dough forms.
4. Stop and scrape down the sides if needed.
5. Check the texture with your fingers: if it is too sticky to form, add more protein blend (or almond flour or oat flour) and blend again.
6. Once you achieve a sticky but firm texture, wet your hands and roll the mixture into bite-sized bliss balls.
7. Place them next to each other on a plate until you have used up all of the mixture.
8. Put the crushed pistachios in a small bowl and the matcha powder in another. The exact amounts will vary depending on how large the balls are and how many of them you want to have in each of the coatings.

Notes

Roll your formed bliss balls in one of the coatings (or even both) and enjoy immediately or store in the fridge for half an hour before serving to let the balls firm up. The bliss balls can be kept in a sealed container in the fridge for up to 1 week or in the freezer for 2-3 months.
